I suspect most things needing something like that are handled by healers (and remember, Jonan actually is a healer), and it certainly didn't seem too odd for the runecaster that rehydrated him to do so without physical intervension. But if he can open his mouth in the circle, perhaps a straw in the corner of his mouth might help bypass the miscast.
Really, though, can you see Jonan doing something so undignified as to snort water up his nose? He would have to be in a VERY bad way to even try it, and certainly not where anyone might actually see it.
And speaking as someone with a swallowing problem, inhaling liquids could get it into your lungs, something you want to avoid for all sorts of reasons

The gastrointestinal tract has two ends. One is the mouth, and the other is an even *more* undignified method of rehydration, albeit one that has no risk of inhaling liquids and is very effective.

There was actually a LOT of talk about nasogastric intubation back when this first happened to Jonan. xD The main thing is that, while there are probably equivalent procedures in Varænske, Jonan certainly doesn't know how to do them because his specialty is MAGIC and he can't just google it. Finding a professional who still wants to help once they figure out who he is has been a bit of an ordeal so far.
Dehydration is a terrible way to go, and Jonan would probably(?) rather be undignified than die, but choking on water that you poured down your nose because you never imagined you'd have to know how to do this ALSO sounds like a bad way to go,,,

I don't suppose anyone in this reality has ever thought of a nasogastric tube? Jonan could really use that.
Or I suppose, in extremis, he could try sucking water up into his nose and swallowing it that way? Messy, undignified and... yeah, he'd never go for it, would he?
